Ask people to name the single healthiest food and you will get confident answers: kale, salmon, blueberries, maybe a lentil evangelist in the mix. All of them are reasonable picks. None of them, alone, would keep a person adequately nourished for more than a few weeks. That is not a flaw in any of these foods. This is the practical version of variety.
