Pick up a raw cucumber and a handful of raisins that weigh the same, and the difference isn't really about sugar or fiber first, it's about water. One is roughly 95 percent water by weight, the other closer to 15 percent. That single fact explains why a cup of chopped spinach costs about 7 calories while a cup of dried fruit can run past 400. Why water dilutes calories but not nutrients
